What Has to Happen Before a Restaurant Can Reopen After Damage?
It depends on the damage and on your local health department, so call the department early and follow its direction. After a fire, flood or sewage backup reaches food areas, reopening usually means three things: food and packaging that were exposed are discarded, food-contact surfaces and equipment are cleaned and sanitized, and the kitchen is ready for any inspection the department requires.
We handle the cleanup, sanitizing and drying, document what was removed and cleaned, and schedule the work so your kitchen is ready when the inspector is. Typical first steps by loss type:
| Loss | What we do first | Before reopening |
|---|---|---|
| Kitchen grease fire | Secure the site, remove soot and smoke residue, clean up after the suppression system discharge | Kitchen surfaces cleaned, odor removed, equipment checked by its service provider |
| Walk-in cooler or ice machine leak | Extract water, dry under equipment and inside walls, check for hidden moisture | Floors and walls verified dry so mold does not follow |
| Sewage backup in a kitchen or restroom | Contain the area, remove contaminated porous materials, disinfect | Exposed food discarded and surfaces sanitized as the health department directs |
| Sprinkler discharge or roof leak | Stop the water, extract it, protect equipment and furniture | Ceilings, walls and floors dry and repaired |
| Hotel guest room leak | Find the source, check the rooms above, below and beside it | Rooms returned to service one at a time |
How Do You Handle Smoke and Soot After a Kitchen Fire?
Even a small grease fire spreads smoke well beyond the line. Soot settles on dining room ceilings, walls, booths and fabrics, and odor moves through the building's ventilation.
- Board-up and securing of the building the same day when doors, windows or the roof are damaged.
- Cleanup of residue after the fire suppression system discharges.
- Soot removal from kitchen surfaces, walls, ceilings and the dining room.
- Odor removal at the source, not just masking.
- Cleaning or pack-out of furniture, decor, linens and smallwares.
- Reconstruction of damaged walls, ceilings and finishes on the same plan.
Can a Hotel Stay Open While Rooms Are Restored?
Usually, yes. Most hotel losses start in one room and reach the rooms below and beside it. We find every affected room, take only those rooms out of service, and return them to inventory as each one is finished.
- Moisture checks in the rooms above, below and beside the source, plus corridors and ceilings.
- Quiet work scheduled with the front desk so nearby guests are disturbed as little as possible.
- Odor and mold checks in bathrooms and room HVAC units after water damage.
- Carpet, pad and drywall work in corridors done in sections, so the floor stays usable.
- Room-by-room records so you know which rooms were out of service and for how long.
